Murasaki

Ipomoea batatas ‘Murasaki-29’ is a specialty-type white flesh dark purple skin variety. The name means ‘purple’ in Japanese and similar to in look and culinary properties associated with premium Asian varieties which are often steamed instead of baked. ‘Murasaki-29’ has a bright white flesh and a high dry matter content of 30-32%. It has a more potato like flavor and is less sweet. This variety has little or no beta carotene.
