Murasaki Sweet Potato

Sweet potato

Murasaki is a specialty variety with white flesh and dark purple skin. The name means “purple” in Japanese, and it shares the culinary characteristics of premium Asian varieties, often steamed rather than baked.
With a high dry matter content of 30 to 32%, it has a texture and flavour closer to regular potato, less sweet, and with little or no beta-carotene.
